BASED ON AN AGE-OLD RECIPE
The English word 'gin' is in origin an abbreviation for the Dutch 'genever' (now 'jenever'). Cley Gin goes back to that old, traditionally made malt wine, flavored with juniper berries and herbs. Prepared with care and attention and prepared according to a 17th-century recipe, this produces exceptional, tasty kinds of gin.
DUTCH DISTILLATION TECHNIQUE
Micro-distillery Cley has, among other things, an old copper alambic (still) that was made by the firm H.J. Scheffers from the 'gin city' of Schiedam. A special feature of the Schiedam alambic is the 'aroma ball' that is used for 'fine distillation'. The liquid passes through the still three times before it goes on as a spirit to become whisky or as malt wine to serve as the basis for the gin.
