With what do you fill your cask? 

You can choose from:

New spirit, made from malt from De Speelman mill. You have completed the last distillation run yourself (no additional costs)

— 2 —

Single malt whisky that has matured for 3 years in ex-bourbon casks (additional charge € 5 per liter)

— 3 —

Malt & rye whisky hat has matured for 3 years in ex-bourbon casks (additional charge € 5 per liter)

 

What type of cask can I choose?

Our casks are made of virgin American oak. In a number of these casks sherry or wine is stored for 3 months. These casks are then emptied and delivered to the Cley Distillery:

virgin American oak, toasted

Gives the whisky a beautiful, golden yellow color. Notes of vanilla, oak.

 — 2 —

American oak on which oloroso-sherry matured

Provides subtle sherry notes and an amber glow.

 — 3 —

American oak on which moscatel wine matured

Provides floral, sweet and citrus notes and a dark yellow color.

 — 4 —

American oak on which Pedro Ximenez-sherry matured

In addition to notes of cooked grapes and balsamic, this gives the whisky a dark amber color.
